Is it possible that Proof coins could end up in circulation, say some kid decided to steal some coins and spend it on a soda by placing them in a vending machine, and it's now in circulation. Would it still be accepted as legal tender?

There's no such coin as a 1981 "American Eagle". That name is given to large-size (40 mm diameter) coins containing 1 troy oz. of silver and minted for sale to collectors and investors, not for spending. The first "eagles" were released in 1986 and all feature the famous Walking Liberty design on the front.

My guess is that you have either a privately-minted piece or more likely a Susan B. Anthony dollar. An Anthony dollar is the same size as a current Sacajawea or Presidential dollar coin (26.5 mm) but shows an eagle landing on the moon on the reverse and a severe-looking portrait of Ms. Anthony on the front. 1981 SBAs were only released in mint and proof sets. The mint mark is by her shoulder on the left side of the coin - P, D, or S. There is only one variety of 1981 SBA dollar that has any significant value. The 1981-S Type 2 proof has a much clearer "S" than the more common Type I coin, often referred to as a "blob" mint mark because it's so indistinct. 1981-S Type 2 dollars retail for upwards of $100 but unless you're an experienced collector, identification should be made by an expert.
